March is nutrition month and every Saturday at the Saskatoon Farmers’ Market dieticians and public health nurses will be demonstrating healthy choices in the market kitchen, answering questions, and offering nutritional advice for the whole family.
Barley is often thought of as a soup ingredient but try it in a salad – you won’t be disappointed.
Dieticians Theo Phillips and Chelsea Harris made this salad with pearl barley, red bell peppers, green onions, parsley, canola oil, and lemon juice.
